Breaded sambal of Barramundi fillet on a bread of sauerkraut

My fiance said to me this morning “don’t you go German on me now!” , after I told him dinner plans tonight would be fish and sauerkraut.  When I woke up from my imagination and asked him if he really would say something like that, he said, “nah, that sounds like something from the Bronx!”.  Laughing, I continued my day dreams about dinner tonight, which as you can tell by now, I am really excited about.

This is my plan, it’s like so:  I plan to marinate the fish in salt and sambal and then dip the fillet in egg wash and coat the fillet with breadcrumbs.  Then I plan to shallow fry the fish.  I had bought a packet of ready made sauerkraut from the supermarket that day, I plan to cook the sauerkraut in boiling water and serve it with the fish!  What do you think?  Sounds simple doesn’t it.  The only tricky aspect to this whole operation is getting the fish to cook inside whilst on the frying pan.  The reason for this concern is because I ain’t too good at frying fish (salmon for example), and whenever I fry salmon, it is always uncooked on the inside and brown too quickly on the outside.

Let’s hope however my plan works tonight.  I will be taking pictures and posting them up to show a step-by-step guide to this recipe.   Alright, I’m off to do some writing now.. I’ll report back later.

@ 11pm, filing status report on Operation “Fisher-kraut”..

To begin with, here are the basic ingredients you require.  What is missing from this picture is plain flour and milk.

Next, crack egg into a bowl and add 1/4 cup of milk, whisk to create egg wash.  Spread breadcrumbs on a plate, and some amount of flour on another plate.

Coat sambal marinated fish first in flour, then eggwash, then breadcrumbs…

Fish in breadcrumbs… then into the frying pan !!   Pour a lug of olive oil in the frying pan, and a knob of butter.  Fry the fish for about 3-4 minutes on each side until golden brown.  Turn heat down after about 1 minute and let it cook on slow fire for the next 3 minutes…

For the readymade sauerkraut, instructions were to boil in water or broth for 20 minutes and that is exactly what I did.

In the meantime, take fish out when both sides are nicely golden browned, and place them on aluminum foil on tray and place it in a already pre-heated oven at 200 degrees for about another 5 minutes to make sure it is crisp and cooked on the insides.   Watch that it doesn’t burn!

After 20 minutes, strain sauerkraut and arrange them on a plate.When done, serve fish on a bed of sauerkraut with a wedge of lime… Dinner is served !!
